Why is rapid and efficient cooling so essential? To preserve the high quality and unique food features that milk provides. Milk leaves the udder at approximately 35° C. The substantial heat in fresh udder warm milk must be removed quickly to a storage temperature of around 4°C to prevent or minimize the further growth of microorganisms.
